Expert has been involved in research on microwave cooking for over forty years. During that time, he has studied microwave and food interaction. He has developed and improved foods for microwave cooking and has assisted numerous individuals and companies in the preparation of microwave cookbooks, recipes, and new products. He has several patents in this field.

He has spent over forty years developing new microwave food processes. This has included the baking of breads and cakes, the proofing of yeast-leavened doughs, the frying of donuts and chicken, and the cooking of poultry, meats, and sausage patties. It has also included the drying of cracker meal and confectionery, the pasteurization of whole meals, pasta ingredients, and liquids, and the sterilization of food products. He has also developed numerous non-food microwave processes, including aircraft compnent manufacture; chemicalo polynmerization and pharmaceutical drying. Several of these systems are operating industrially and he has many patents in this area.

He has taught courses on microwave heating technology for over 30 years. They are designed for professionals such as scientists, process engineers and technologists. This has involved teaching the principles of microwave radiation, interaction with materials, heating mechanisms, experimental techniques, and applications. He has also published in this area. Expert has lectured for 30 years in a course on industrial drying in which his subject is microwave and radio frequency drying. He is now the Director of the course, which is designed for engineers and scientists. He has also published in this area. He has experience as an expert witness in a case involving an industrial radio frequency dryer.

In his consulting work, he is frequently involved in the development of recipes for microwavable and conventional food products. This has sometimes included the development of cooking instructions and product testing. He has published widely in this area. He has been involved in the development of new food products for over forty years. This has been in all categories including frozen, shelf-stable, refrigerated, meat poultry, dairy, snacks, baking, confectionery, dietetic, and many more. It has involved both conventional and microwave products. Many of these products have had considerable retail success.

Expert has studied the performance characteristics of microwave ovens and written several articles in the area. This has included the effects of various food loads, mass vs. power output, hazardous conditions, and overheating phenomena. He has also been involved in the design of special microwave ovens for thawing blood plasma, sterilzation of medical and dental instruments, and analytical drying. He directs a course on microwave technology. He also does a great deal of performance testing of products in microwave ovens.

Expert has worked on several successful projects involving the successful pasteurization of various food products including whole meals, liquids, and dry ingredients. He has also worked on the pasteurization of non-food materials, especially liquid and dry pharmaceuticals. He holds a patent for the pasteurization of bakery products.

He has worked on the sterilization of food products using microwaves in a major project of a packaging company. This involved the development of a test system which included the accurate measurement of internal temperatures during microwaving. Products studied included meats, poultry, and vegetables. He is currently working on a non-food microwave sterilization system, primarily for use insterilzing medical and dental instruments, and has seven U.S. patents in this area.

Expert has been involved in applications of microwave heating for over 40 years. In that time he has published and lectured widely on the technology and applications. He has developed many microwave industrial processes and microwave oven products. He presents many in-house seminars on microwave topics every year. Topics include but are not limited to: microwavable foods, microwavable packaging, industrial microwave systems, performance testing of microwavable products and packaging, and safety of microwave products and processes.

Expert does a great deal of microwave performance testing of foods, packages, ovens, and utensils. His work has prevented serious problems from reaching the market. He solved a major problem involving the shattering of glass containers in microwave ovens. His publications and methods in this area are used in laboratories around the world. He has developed a microwave packaging process for extending the shelf-life of baked products. He has also developed controlled atmosphere packaging for fruits and vegetables that is in commercial use and a controlled atmosphere packaging for yogurt that was used commercially for several years.

Much of his consulting and R&D involves the application of food technology and food chemistry to the development of new products and processes. Many of these have involved microwave baking. Expert has published extensively in the area of food science and technology involving microwaves.

His work over the last forty years has included baking ovens, fryers, extruders, dryers, mixers, freezers, coolers, and various other types of food processing equipment. He has also had very wide experience in the application of microwave energy to many of these equipment types. Expert work in the baking industry has spanned over forty years. During that time he has developed and helped design baking ovens for bread and cakes utilizing microwave energy in combination with conventional heating. He has also developed industrial microwave fryers and proofers and most recently a microwave granola cooking system.

He has worked in research and development for various microwave heating applications for the pharmaceutical, chemical, rubber, textile, metallurgy, aircraft, energy, and other industries. He has published and lectured widely on this topic. This is a new area that expert is working in, involving the development of numerous consumer products (personal care, household, hardware, and more) to be heated in microwave ovens. He has worked on the development, design, and testing of these products.

He has been working with microwave packaging for over 25 years. This includes the design of packaging systems and performance testing of packages, selection of proper packaging for microwave foods, and other issues. His book entitled "Microwave Packaging" was published in 1992. He has several patents pending on this topic.

Expert has done research on microwave hazards involving baby food, popcorn, paper towels and plates, and numerous food products. This includes investigations of fires, overheating phenomena, and eruptions. He has developed products to overcome these problems. He has written and lectured in this area. Most recently, he presented papers at two international conferences on the causes and prevention of fires in microwave and radio frequency equipment.

Beginning in the 1970s, he has been active in developing several microwave cookware products. He is currently involved with the design and testing of new cookware products. He has chaired a technical committee that wrote test methods for plastic microwave cookware. He lectures on this topic and has a patent for a microwave cooking utensil.

He has been program or conference chairman for 20 international microwave conferences present in the U.S., Europe, and Australia.


Expert is a Fellow of the International Microwave Power Institute, an Honorary Member of the U.K. Microwave Association, and was a Scientific Lecturer for the Institute of Food Technologists for five years. In 2012 has was given, by his peers, the first ever Metaxas Microwave Pioneer Award.
