Summary of Expertise: Listed with other top experts in: 
FOOD MICROBIOLOGY; MYCOLOGY; MYCOTOXICOLOGY. Expert has expertise in food microbiology, mycology, and mycotoxicology. His major research interests have included food poisoning bacteria, foodborne pathogens, food safety, and food processing to control potentially hazardous micro-organisms. He has conducted research with molds and mycotoxins on dairy and meat products, especially cheeses and cured meats, and has evaluated the potential health hazards associated with molds in these products. He has also studied the influence of antifungal agents on mold growth and mycotoxin production as well as the factors which effect the efficacy of antifungal agents. He is currently studying incidence of Fusarium species and toxins in cereal grains, foods and feeds, including fumonisins and deoxynivalenol (DON). Also being studied are the effects of food processing on mycotoxin stability and mold survival. Mold and mycotoxin content of grain dusts, developing selective and differential media for detection of molds and molds in buildings and other environments are also areas of interest.

CORN; CEREAL FOODS. His work has also involved studying the preservation of high moisture corn and other cereal grains, mold spore and mycotoxin content of grain dusts, and the microbial quality of bulk foods in health food stores and supermarkets.

MUSHROOMS. Expert is very knowledgeable in the field of mushroom production, mushroom fermentations and tissue production, the fungal production of beta-carotene, mycoprotein production, fungal fermentations, and the biotechnology of solid state fungal fermentations.

FOOD SAFETY; TOXICOLOGY. At the Expert's University, he has been responsible for teaching courses in Food Microbiology, Foodborne Infections and Intoxications, Food Toxicology, and Food Mycology. He also contributes to the teaching of courses in Food Processing, Bioprocessing of Foods, and Food Product Development, as well as to seminars in Food Science and Technology and Agriculture Employment.

FOOD POISONING. Expert has been teaching food microbiology and foodborne infections and intoxications for over 30 years. He is familiar with foodborne illnesses and disease agents including Staphylococcus aureus, Eschericia coli 0157:H7, Salmonella, Clostridium perfringens, Clostridium botulinum, Campylobacter, Yersinia, Vibrios, and Bacillus cereus.

MOLDS; FUNGI; MYCOLOGY. Expert teaches a graduate level course in food mycology that covers Aspergillus, Deuteromycetes, Mucor, Rhizopus, Alternaria, cladosporium, Penicillium, and Fusarium. He has conducted research on Fusarium, especially Fusarium moniliforme.

AFLATOXIN; OCHRATOXIN; CYCLOPIAZONIC ACID; VOMITOXIN; ZEARALENONE; FUMONSINS; MONLIFORMIN. Employing his expertise in food toxicology, Expert teaches a graduate level course that covers a broad range of toxins. Additionally, he has researched all of the above toxins.

MONILIFORMIN; FUSARIUM MONILIFORME; FUMONISIN. Expert is currently researching mycotoxin produced by Fusarium proliferatium and Fusarium subglutinans, biocontrol of these molds and others, and effects of food processing on mycotoxins.
