Expert has expertise in many aspects of dietary fiber. This includes the effect of different fiber types on cholesterol reduction, colon cancer, and complications of diabetes. He has also done several types of fiber analysis. Most of his work has involved the use of animal models, including rats, hamsters, and gerbils.

Expert's general field of study is nutrition, and he has a broad understanding of the subject.

Expert has done extensive work examining probiotics, prebiotics, and cancer prevention.

Expert has done extensive research on the cholesterol-lowering properties of oat fiber in animal models, focusing on relating the viscosity of oat fiber to its cholesterolemic effect.

Expert has done a number of studies examining dietary influences on colon cancer risk, using animal models. In particular, he has focused on the effect of different classes of wheat and on cruciferous vegetables (broccoli, cabbage, parsley, etc.). Endpoints he has focused on include pre-cancerous lesions and development of cancer stem cells.

Expert also has done animal studies examining how different types of dietary fiber influence development of diabetes and obesity. His lab has shown that viscous fibers are very effective in improving blood sugar control and in reducing body fat, as well as altering satiety-related hormones.
