Expert is very knowledgeable regarding the activities of micro-organisms as they influence food, feed, and human health. His work included the study of staphylococcal enterotoxins, the mode of production, means of detection, and inactivation of enterotoxins and other toxins in food. In relation to enterotoxin studies, he also monitored other staphylococcal enzymes such as coagulase and thermonuclease as a means of detecting the presence of the important pathogen in foods. In addition, he developed a series of tests which rapidly detects toxins in liquid cultures and in foods.

FOOD ANTIMICROBIAL ADDITIVES; FOOD ANTIOXIDANTS. Expert is knowledgeable about the effects of antioxidants on a variety of gram-positive and gram-negative bacteria. He also studied the inhibitory effects of selected antioxidants on the production of carcinogenic compounds by Aspergillus parasiticus and A. flavus.

MEAT SCIENCE; MEAT QUALITY ASSURANCE; MEAT SPOILAGE; MEAT STORAGE. Expert is also experienced in meat science. He has defined the proper chilling time and rate for hot-boned beef such that the products will be microbiologically safe and palatable. He also developed rapid methods on monitoring microbial load on meat surfaces. In addition, Expert studied the effects of microwave energy on nutritive values of foods and the destruction of pathogens by microwave energy. He has also studied the microbiology of cottage cheese, retail milk, milk flavor, and rapid drying of dairy products and foods by infra-red oven.
