He joined the Hershey Corporation in 1974 as a Supervisor in Animal Research responsible for conducting all corporate nutritional and toxicological research. He became a Group Leader in Nutritional Sciences, involving monitoring regulatory affairs, evaluating the nutritional quality of products, evaluating the effects of processing on nutritive value, and doing detailed toxicological evaluation of naturally occurring alkaloids in cocoa. He then held a number of roles, such as the Director of Food Science and Nutrition, where he was responsible for all research activities in analytical research, laboratory services, microbiology research, nutrition research, biochemistry research, biotechnology, toxicology, nutrition affairs, ingredients research, and process research. His final role at Hershey was as the Senior Director of Food Science and Technology where he was responsible for all basic and applied R&D and support of product development, product improvements, and new ingredients.

In 2002 he founded his own consulting group of scientific and regulatory consultants who provide expert scientific and regulatory consultation to food, nutrition, beverage, chemical, and pharmaceutical companies. Expert has written a number of abstracts and articles, and he is also the co-owner of six patents relating to ingredients and processes. He is a member of many organizations including the Society of Toxicology, American College of Toxicology, the American Society for Nutritional Sciences, and the American Society for Pharmacology and Experimental Therapeutics, and he serves as a member of the FAO/WHO Expert Committee on Food Additives. He is available for safety assessments of ingredients, new product design and execution, R&D of new products, critical reviews and strategies for ingredient usage and approval, expert testimony, expert panels for GRAS assessments, self-GRAS reviews, health claims and qualified health claim petitions, and design and management of clinical trials.
