Expert has had extensive education and industrial experience in the technology of processing fresh and cooked meat products. This includes sausage and delicatessen products and cured and smoked meats. Research in these areas has been for industrial product processes and new product development. He conducted basic research in fresh beef production and lipid deposition in beef animals at the University of Wisconsin. His industrial work included the development of low and fat free process meat products with an emphasis on sausage and delicatessen products. He also did extensive work on fresh pork production such as prerigor processing and rapid chilling methods. He has worked on and was responsible for production of smoked and cured products. Included in this was the development of sectioned and formed products from pork, beef and poultry raw materials. Primary objectives were product integrity, color development and water binding.
