    Definition:  Enzymatic Browning - Browning that occurs in damaged plant material, such as during the freezing of fruit that has not been properly treated. It is caused by an enzyme, polyphenoloxidase (tyrosinase), which is released from the damaged cells and oxidizes naturally occurring phenols to quinones.
