    Definition:  Polysorbate - A nonionic surfactant that is obtained by esterification of sorbitol with one or three molecules of a fatty acid under conditions which cause splitting out of water from the sorbitol. It is used as an emulsifier in the preparation of some pharmaceuticals or foods, a dispersing agent, and as a foaming and defoaming agent.
